Dreamy Creamy Red Potato Salad

 4 Organic Medium Sized Red Potato's 3/4 Baked Through 

2/3 Cup Avocado Mayo(By Primal Kitchen)

4 Organic Pastured Raised Hard Boiled Eggs Peeled//Sliced

1/2 Organic Chopped Purple Onion

4 Slices Nitrate Free Bacon Cooked/Chopped(Optional)

1-2 Organic Stalks Celery Chopped

2-3 Organic Garlic Cloves Minced

1/2 Cup Organic Sweet Pickle Relish

1 Tbsp Organic Cracked Black Pepper

1 Tbsp Salt ( NTM)

1 Tbsp Organic Sweet Basil Leaf

1 Tsp Organic Rosemary

1 Tsp Organic Smoked Paprika

1 Tbsp Organic Garlic Powder

1 Tsp Organic Onion Powder

1 Tsp Organic Celery Seed

Rub dry red potato's with olive oil and bake at 425 until still slightly firm. It was about 45 minutes for my oven and size potato. Cut the potato's into your desired size, I quartered them and add them to a nice sized mixing bowl. Add the rest of the vegetables and eggs. Give a mix and then add the mayo. You may need more or less with the mayo. Mix all your spices together in a separate bowl and then fold in and mix well. Chill well and serve. Always better the next day. It is a HIT! I used bay leaves to garnish.
