3 Tbsp Organic Extra-Virgin Olive Oil
2 Tbsp Organic Balsamic Vinegar
2 Organic Garlic Cloves Minced/Pressed
NTM Salt To Taste

1 Organic Ripe Avocado Diced
2 Organic English Cucumbers Sliced Thinly
1-2 Cups Organic Arugula
1/2 Cup Organic Cherry Tomatoes Halved

In a medium bowl, whisk together the olive oil, balsamic vinegar and garlic until blended. Season with salt and pepper. Add the avocado and cucumbers to the bowl and toss to combine. Then add the rest of the veggies tossing gently to combine. Season with additional salt and pepper if desired. Serve immediately.
