Persimmon Fall Salad (Delicious!!)

Salad Ingredients:

6 cups mixed greens

1 Fuyu Persimmon, diced

1 small diced apple or grapes, halved

1/2 cup goat or feta cheese, crumbled

1/4 cup pecans, toasted

Vinaigrette:

3 Tbs. white balsamic vinegar

2 Tbs. olive or walnut oil

1 Tsp. Dijon mustard

1 Tbs. Organic Sugar

1/2 Tsp. celery seed

Preparation:

Place vinaigrette ingredients in closed container adding salt and pepper to taste. Cover and shake until well blended. Just before service, toss vinaigrette with greens, persimmon, and diced apple/grapes. Top with crumbled cheese and toasted pecans.
