Strawberry Crumb Bars

Crust & Crumble

1 Cup Organic Oats

3/4 Cup Organic Flour

1/2 Cup Organic Coconut Sugar

1/2 Tsp NTM Salt

6 Tbsp Organic Coconut Oil

1 Tsp Homemade Vanilla


2 Cups Organic Strawberries Chopped

2 Tbsp Organic Coconut Sugar

Zest Of One Organic Lemon

2 Tsp Organic Corn Starch

Preheat your oven to 350 degrees F. Line your 8x8 baking pan with parchment paper. For the crust, in a large bowl whisk together oats, flour,coconut sugar, and salt. Stir in melted coconut oil and vanilla unit it is a well mixed crumble mixture. Set aside 1/3 of the mixture; pour the other 2/3 into the prepared pan and press into an even flat layer with your hands. Set aside while you prepare the filling. For the filling in a large bowl, toss the cleaned, cored and chopped strawberries, coconut sugar, lemon zest and cornstarch until strawberries are evenly coated. Pour the mixture over the top of the pressed crumble crust into an even layer. For the crumble, sprinkle the remaining 1/3 crumble mixture over the top of the strawberries as evenly as possible. Bake for 35 minutes until crumble and crust are golden brown. Fruit may be bubbling but it does not have to be. Let cool completely before cutting. I like to put it in the fridge to cool. Lift the parchment paper out of the pan and slice and serve. Enjoy!
